This research focuses on optimizing harvest and postharvest technologies for cassava leaves (Manihot esculenta Crantz) with respect to human nutrition. Although cassava leaves are rich in protein, vitamins, and bioactive compounds such as carotenoids and chlorophyll, their utilization is limited by variations in nutrient composition and the presence of toxic cyanogenic compounds. The study is structured into three main parts. The first part investigates the effects of cultivar, plant age, and leaf position on protein composition, chlorophyll, carotenoids, and cyanide content of cassava leaves. The second part evaluates the potential of Near-Infrared Spectroscopy (NIRS) as a rapid and non-destructive method for quality assessment of cassava leaves and roots. The third part examines the drying behavior of cassava leaves and the effects of drying temperature on cyanide reduction, nutrient retention, and overall quality. Overall, this research contributes to improving the safety, nutritional value, and utilization of cassava leaves as a sustainable food resource.
